Wild Spring Greens Salad with Maple Balsamic Dressing

One of my favorite things to do in the springtime is to gather young wild greens for my salads. I love eating salads full of dandelion, common evening primrose, red clover, and chicory greens. When harvesting any of these greens, make sure to follow safe and ethical harvesting practices, and wash thoroughly with cold water prior to consuming. Enjoy!

Ingredients

  • ½ C Real Maple Syrup
  • ½ C Balsamic Vinegar
  • ¼ C Olive Oil
  • Wild spring greens (chicory, dandelion, common evening primrose greens, etc.) and desired salad ingredients

Directions

  1. Whisk the liquids together.
  2. Mix greens with lettuce or commercial greens of your choice (optional). Add other salad ingredients if desired.
  3. Toss dressing with salad. Enjoy!

    Since I live on a farm in the Spring Green area, I will have to try your dressing. I can easily find all of the greens on our farm.
